Mindy describes her journey as one hell of a wild ride jumping in her much loved 1960’s VW beetle in my early 20’s preparing to head in one direction, making many detours, hitting many speed bumps and roundabouts until she ended up in a place and position she could never have imagined.
After starting out as physiotherapist, a passion for cooking in 2012 turned into something far beyond expectations when she became a contestant and finalist on MasterChef Australia. Fast forward seven years and she’s successfully taken a leadership role as the CEO of Lotus Dining Group, which she says is “Without doubt the greatest accomplishment and challenge of my life”
